Xmas Pud Truffles

Why not use leftover xmas pud to make these lovely truffles? (free-from options will obviously depend on your xmas pud...)

Ingredients
- 100g df/gf/sof dark chocolate, chopped (we used Plamil)
- 75g dairy free spread (I use Biona with palm fat – gives richer finish to baking)
- 75g icing sugar, sifted
- 200g free-from xmas pud, cooked and finely chopped
- Icing sugar/ cocoa/ ground almonds for dusting
Preparation
- Line a baking sheet with greaseproof paper.
- Melt chocolate in a heatproof bowl over a pan of simmering water (or in the microwave on low setting).
- In a separate bowl beat together the dairy free spread and sugar.
- Add the melted chocolate and chopped xmas pud.
- Place the bowl, covered, in the fridge for 1 hour.
- Shape teaspoons of mixture into balls and roll in icing sugar/cocoa/ground almonds to coat.
- Keep prepared truffles in an airtight container in the fridge until needed.
