Xmas Macaroons

Xmas Macaroons

Makes approx 30, prepare a day in advance.

Ingredients
  • 2 large egg whites
  • Pinch of salt
  • 225g caster sugar
  • Zest of 1 orange
  • ½ teaspoon vanilla extract
  • 1 teaspoon almond essence
  • 300g ground almonds
  • Icing sugar for dusting
Preparation
  • Whisk egg whites and salt until stiff and dry.
  • Gradually whisk in the sugar – will be gooey consistency.
  • Add orange zest, vanilla extract, almond essence, and ground almonds until forms a hard paste.
  • Dust icing sugar on your hands and shape into small lozenges.
  • Lay onto greaseproof-paper lined baking sheets and leave to dry-out overnight.
  • Heat oven to 140C/ Gas1 and bake for 30 mins until pale golden and slightly cracked
  • When cooked dust with icing sugar and cinnamon and serve.
  • Store in airtight container for up to one week.
