Goats Cheese, Pear and Walnut Salad

This is quite a substantial salad. The dressing is fairly heavy which balances the walnuts and cheese. If you prefer a lighter dressing then use sunflower oil instead of olive oil. Alternatively just sprinkle with balsamic vinegar.

Serves 6

Ingredients
  • 3 ripe pears, quartered and cored.
  • 1 tspn lemon juice
  • 1 tspn caster sugar
  • 4 tbspn olive oil
  • 150g goats cheese (we used Capricorn goats cheese from Tesco)
  • 100g bag mixed salad leaves
  • 40g walnut pieces
  • Dressing:-
  • 2 tbspn olive oil
  • 1 tbspn red wine or raspberry vinegar
  • 1 tspn wholegrain mustard
  • ½ tspn clear honey
Preparation
  • Preheat grill.
  • Combine dressing ingredients in a small bowl and whisk with a fork.
  • Slice pears and place in a single layer on a grill pan/baking sheet.
  • Sprinkle over lemon juice and sugar and grill for 5 mins or until lightly
  • caramelised.
  • Meanwhile, thinly slice the goats cheese.
  • Scatter mixed salad leaves in large serving bowl. Scatter over walnuts and cheese slices.
  • Add warm pear slices.
  • Dress and serve – nice with warm free-from baguette.
